- Lock in the final guest count on a specific date before the event, most caterers require this 5-7 days out since it drives final food cost.
- Spell out what happens to the deposit on cancellation, especially close to the event date.
- If rentals or staffing are included, list them explicitly so there's no ambiguity about what's covered.
